It is true, Microsoft does not have any official comment about updates; but that is for a simple reason: updates are not applications.
Windows updates usually replace system DLLs by newer versions or simple placing a delta file for a system component. Most of those situations go beyond the scope of an App-V package.
One interesting remark you can find in App-V 4.6 IPD (Infrastructure Planning and Design Guide), about Sequencer considerations: 
Talking about antivirus software not being recommended to use when you are sequencing, quote: &quot;It is possible to create a sequenced package with DLLs or other configuration information from antivirus software, which may be undesirable.&quot;
